You make some good points, but your argument on Flash, especially with regards to the Peninsula website, are flawed. The Pen website does consistently well in SERPS because of the high number of incoming links for valuable search terms - it is universally perceived by SE's as an Authoritative brand, despite the crippling design of a flash heavy site (all in the index file, a distinct lack of creative MetaInfo).

You also talk about using HTML menus, rather than images... Why not utilize both? If you practice using the correct Alt Attribute you open yourself up to image searches in addition to those that are text based - don't remove possible traffic avenues. You contradict yourself in recommending lots of pictures, but removing the image menu. In many cases the traditional image file will have an historical weight within SERPs, and removing these elements can be crippling to your site.

As for the rest, it's all content, which *should* be the basis of any decent website. If you're in the restaurant industry, as you rightly pointed out, the content that is available to you is almost limitless, it's about having the creativity to implement it.
